Where do the weekends go?

Saturday we did some spring cleaning around the house… and then we actually made progress out in the garage.  Hubby drove over 4 boxes of stuff to Goodwill.  I threw out a lot of things, and I even unpacked the last 3 boxes from our kitchen ordeal last April!   I found my long lost Rachael Ray orange serving pieces.  🙂

Saturday night, we had friends over to watch the Champlin Park Rebels play in the championship state tournament game.  I had fun with the food and the kids!  It was an intense game.  The Rebels ended their undefeated season with a loss – by three points to Apple Valley.  Sad to see them lose, but WHAT A SEASON!  Here are some pictures from the evening.

Sunday, today, I worked for quite a few hours on the MCA testing accommodations calendar for my department as the state testing window draws nearer.

I also made a yummy lunch for my boys when they returned from church.  They were tasty sandwiches!  Here’s the recipe:

Baked Ham and Cheese Party Sandwiches

INGREDIENTS:
3/4 cup melted butter
1 1/2 tablespoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
1 1/2 tablespoons poppy seeds
1 tablespoon dried minced onion
24 mini sandwich rolls (I used Hawaiian buns)
1 pound thinly sliced cooked deli ham
1 pound thinly sliced Swiss cheese
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
2. In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
3. Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

This morning, I also started the crock pot with our corned beef in it and a crock pot with a whole chicken in it for another recipe this week.  I made Irish Soda Bread to complete our Irish feast tonight.

My grandma and my mom always made corned beef and cabbage dinner for St. Patrick’s Day.  This year was weird not being able to call Grandma as I always have a question.  So, I called my sister and we chatted for quite some time.   Mom and Grandma always decked out the meal with green butter and sometimes, the leprechauns would dye our milk or water in our glasses!  I didn’t do any of that this year…but our meal was tasty.

I was saddened on Saturday as I was busy cleaning in the living room and I heard Punky sobbing.  He had been playing games on my laptop and then had discovered my video I had made of my grandma singing Happy BIrthday to me.  He was listening to it with tears streaming down his face.  My keyboard was all wet.  The poor kid has so much heart and grief.  He cried for a good half an hour about Grandma Smart and Grandpa Kenny.

He did ask me if I would make him a video of her singing Happy Birthday to him (I have it on my voicemail) along with pictures of him with her.  That’s now on my to-do list.

I have to say that I am loving my oils.  I’m waiting for my new Thieves to arrive this week.  Our favorotes by far are Stress Away, Thieves, Lavender, Peppermint, and Lemon.   I do use Joy every day even though it stinks.  😉  My Marjoram came last week (the one my Zyto scan suggested….) and I love it.  I have been sleeping hard with my lavender, Cedarwood, and Valor.  Wow!  Cannot wait for more Thieves to get here….my diffuser misses it!
