Today was a total snuggle day with this little guy. Kirby was very congested today. So, he did a whole lot of this…
While he slept, I caught up on my DVR shows. I watched 4 episodes of Revenge, 2 episodes of Castle…and started an episode of Grey’s Anatomy. I could have stayed on that couch forever with him sleeping in my arms… but then he woke up! And all that sleep lead to this:
A super happy baby boy who could breathe after being upright most of the day. It was so nice to just enjoy him all day long. Besides the snuggles, I got lots of smiles and some giggles, and lots of “talking.” Just made my heart smile all day long.
Best part of this “fun time” was I didn’t have to stop and worry about what was for dinner… that was already in the crock pot! Ranch Crock Pot Pork Chops made my house smell so yummy! What, you want that recipe? Ok… twist my arm…

Ranch House Crock Pot Pork Chops with Parmesan Mashed Potatoes
6 pork chops, 1/2 inch thick
1 packet dry Ranch Dressing Seasoning
10 oz can Cream of Chicken Soup
4 lbs peeled, cubed potatoes
5 Tablespoons real butter
1 cup fresh grated Parmesan cheese**
2 teaspoons minced garlic
1- 1 1/2 Cups warm skim milk (any milk will do, I used skim)
1 Tablespoon salt, or to taste
1 teaspoon fresh cracked black pepper, or to taste
Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours. (Mine were on low all day long.)
Place potatoes into a large pot of cold water. Place onto stove top over high heat and bring to a boil. Once water is boiling, cook for 20 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, Parmesan, garlic, milk, salt and pepper. Season to taste if needed.
** I have to cheat here. I LOVE fresh Parmesan cheese; however, Punky won’t eat anything with melted cheese (he picks it out right away as stringy!), so I used the grated Parmesan cheese…you know the Kraft kind that you sprinkle over spaghetti, and Voila! Parmesan cheese taste and no strings! 😉 Tricky, eh?
After our scrumptious dinner, I had a dentist appointment for 2 fillings. (Ok, THAT part of my day wasn’t very fun.) But, shortly after I got home from my appointment, I walked into the boys’ bedroom to this:
Bedtime storytime at our house. Again, it just warms my heart. Punky loves listening to his daddy’s “radio voice” read each night. Henry also falls asleep listening to it. Tonight’s story: Ramona and Beezus — just 2 chapters.
So, today was one of those days that I will file in my mind as peaceful and rejuvenating. I’m sure I’ll be retrieving this day’s memories for quite sometime. I so love my boys!
